Ingredients
  

  • 1 cup strawberries
  • 1 cup cucumber
  • 1 sprig of fresh mint and or fresh basil
  • 1 tablespoon honey
  • 2 tablespoons sour cream
  • 1 teaspoon honey

Instructions
 

Prepare Ingredients

  • Peel and remove seeds from cucumber then dice into small bite sized pieces
  • Hull strawberries (remove stem, leaves and white core)
  • Mince mint and/or basil
  • In a small bowl mix together strawberries, cucumber, mint and/or basil and 1 tablespoon honey
  • Add 1 teaspoon honey to 2 tablespoons sour cream for topping
  • Spoon salad into dishes and add a dollop of topping

Notes

This is an all natural, healthy, fresh and light salad.  With a touch of added sweetness from honey it's a perfect way to get some vitamins and minerals into your picky eaters diet. It's also a scrumptious late night snack or dessert with far less calories and carbohydrates than most alternatives.
