Ingredients

  • 2 pints grape tomatoes your choice of colors
  • 3 tablespoons olive oil
  • 2 tablespoons butter or margarine
  • ½ teaspoon salt
  • 1 box bowtie pasta usually sold as farfalle
  • shredded cheese if desired

Instructions

Prepare Ingredients

  • Cut grape tomatoes in half across the middle NOT lengthwise.

Cooking Instructions

  • Put the pasta on to cook. Drain when done. If tomatoes are not ready, add a splash of olive oil to the pasta so it doesn't stick.
  • Heat a 10 or 12 inch skillet on medium high heat. Add olive oil when pan is warm.
  • Add salt and cut tomatoes to the skillet. Cook until they are just getting tender. Do not overcook the tomatoes. Take the skillet off the heat.
  • Let butter melt on top and stir in gently.
  • Turn the cooked pasta into the tomato mixture and serve.

Notes

To add additional flavor and protein to this pasta, you can use Italian sausage meat, ground beef, ground chicken or ground turkey. You can also sprinkle some shredded cheese on top of the served portion.
